In a blender, combine the milk, cottage cheese, onion, Parmesan cheese, salt and pepper;cover and process until smooth. Pour into a bowl; stir in the macaroni and 1/4 cup cheese. Transfer to a 1-qt. Baking dish coated with cooking spray. Sprinkle with remaining cheese. Cover and bake at 350° for 30 minutes. For many, Macaroni and Cheese is the ultimate comfort food. There’s just something about the dish that says “home.” And while the methods to make it vary widely, I’ve got a super easy way to get a delicious, gooey mac and cheese on the table in about 10 minutes. In a large pot of boiling salted water, cook the macaroni according to the package directions. Drain well and return the pasta to the pot. Add the butter and stir over medium heat until the butter has melted and the pasta is coated. This is an eggless baked mac and cheese, its obviously vegetarian dish but not vegan since we use real cheese, milk, butter etc. There is no need to add flour or make roux as this is a very simple recipe for baked mac and cheese, but it taste delicious with minimal efforts.

  • 2 cups dry small elbow macaroni or shells
  • 1/4 cup (butter or margarine, cut into pieces, about a 1/2 stick
  • 1 can (12 fluid ounces) Nestle Carnation Evaporated Milk
  • 2 large eggs
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ground white pepper
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) American cheese, cut into pieces

Preparation

Step 1

Preheat oven to 350°F.
Prepare pasta according to package directions. Return to saucepan. Add butter; stir until melted.
Whisk together evaporated milk, eggs, mustard and pepper in medium bowl. Add to pasta mixture; stir. Add cheddar cheese and American cheese; stir.
Cook over low heat, stirring constantly until cheese begins to melt. Pour into 1 1/2-quart casserole dish.
Bake for 10 minutes; stir. Bake for an additional 20 to 25 minutes or until bubbly and top is lightly golden. Season with salt.
FOR FREEZE AHEAD:
Prepare as above; do not bake. Cover; freeze up to 2 months. Thaw overnight in refrigerator.
Preheat oven to 350°F.
Bake, uncovered, stirring halfway through, for 45 to 50 minutes or until bubbly and top is lightly golden. Season with salt.
